Our son, Jim played football and I was always looking for a healthly after practice snack for him and his friends

A HEALTHY CROWD PLEASER COOKIE

1/2 cup butter
1/2 cup margarine
1/2 cup dark brown sugar
3/4 cup white sugar
2 eggs
1 Tablespoon vanilla
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
2 cups flour
2 cups coconut
3 cups Rice Krispies
1 cup chopped nuts....I use walnuts
1 1/2 cups quick oats
1 cup semisweet chocolate chips
Preheat oven to 325 degrees.
Beat butter, margarine and sugars until fluffy. Add eggs and vanilla and beat thoroughly. In a large bowl, combine remaining ingredients and mix well, then add to wet ingredients. I combine this by hand.
Drop by heaping teaspoons on ungreased cookie sheet and bake for 12 minutes.

This recipe makes 10 dozen.
